To be a man you must me male, which has only one biological reality and identification: possession of a Y chromosome. Trans persons should have all the freedom in the world to do whatever they want to do to themselves as well all legal protections. Sex and gender are two distinct terms and notions, one biological, the other cultural and can not be tenably conflated.
